Grouper Cakes Recipe
Captain John’s Grouper Cake Recipe
The below ingredients may be substituted with other ingredients to suit your taste. Anything goes when you don’t have certain ingredients.
- 1 Pound grouper fillets
- 1 teaspoon salt and black pepper
- 1 cup of Ritz crackers crushed
- 1 cup of minced peppers
- 1 large egg, lightly beaten
- 3 tablespoons of minced green onions
- 1 tablespoon of miracle whip
- 1 teaspoon of lemon seasoning
- 1 teaspoon of Old Bay seasoning
- 1/4 cup of canola oil
Preheat oven to 375 degrees. Line a baking sheet with foil and spray a light coating of cooking spray on it. sprinkle salt and pepper on fish and place in cooking pan. Bake fish for 20 to 25 minutes or until fish is flakey. Then let fish cool. Flake fish in mixing bowl and add crackers, peppers, egg, green onion, miracle whip, lemon seasoning. Mix thoroughly, then add Old Bay seasoning. Mold into paddies and place in fridge for 2 hours to overnight.
When ready to cook, use a large skillet with heated Canola oil. Cook paddies through and through approximately 3 minutes per side. Serve with green salad or slaw. Pair with your favorite Sauvignon Blanc Chardonnay wine. I like wines from “Clos Du Bois”,” Josh”, and “Kendall Jackson”.
